It kinda feels like the days are getting kinda repetitive lately with lots of time spent at various doctor offices. I’m still going to therapy for my elbow on the reg and and since I’d had my boobie appointment last week, I figured I would change things up and get my other girl parts poked at, but we’ll save that for another post
because the mr would rather I over share here than fill his ear with talk of hormones and how lady bits work
So let’s talk about my favorite thing next to running and lifting: breakfast. 🙂 It was mr running it’s birthday, and that meant keeping the Saturday morning mileage short enough to get home and make birthday brunch. Breakfast is usually egg whites & oats, or a protein shake as we head out the door, so it’s kind of a big deal when there are waffles, eggs sunny side up and bacon involved. Ha.
Sad for me, waffles aren’t really on the meal plan these days. I’ve been trying to reel in the
gluttony food splurges since I haven’t been running the miles to burn up all the calories I’ve been taking in and my body is showing it these days (I’m learning to go by fit of the clothes or photos every few weeks rather than a scale). Not to be left out of the party, however, this was the perfect opportunity to try out the sample of ProCakes I received recently.
Confession: I’ve tried making protein pancakes on my own before. Let’s just say there’s a reason you haven’t seen any recipe posts from me for them. They’ve either come out too chewy, too dry, or altogether not what your mouth expects a pancake to be. I love me a good breakfast with the full spread
including mimosas and bloody mary’s . My problem, however, is that while I’m not diabetic, not even close, my body totally hits a wall and crashes after a carb heavy meal. I’m talking nap. for. hours. kind of crash unless I head out shortly after for a serious workout. I’m pretty sure I would lose wife points by eating and leaving the mr to fly solo for his birthday, so I was pretty stoked to have ProCakes as an option. From their site:

We’re not fans of sugar (in any form, organic or otherwise) around here, so we chose to sweeten ProCakes with xylitol, a naturally occurring sweetener derived from tree bark. It doesn’t behave like sugar (or sugar substitutes) in that the body slowly absorbs and metabolizes xylitol, so there’s negligible spikes to insulin and it doesn’t raise in blood sugar levels
Yay, me! While waffles were cooking, I mixed up the batter and was even more excited to find a jar of 5150 nut butter hiding in my pantry (it was starting to feel like my birthday, ha!) because I’m not a fan of syrup, either. Dang, I’m wanting breakfast again just telling you about it. They seriously cooked right up like regular pancakes. Sorry, all you get is my sketchy iPhone pic, I was too hungry to track down the beast of a camera.
The texture looks like your average hot cake. Totally light, fluffy, and just as good as the pancakes I make from scratch. With over 20 grams of protein between the whey protein and the egg you add, there wasn’t even a trace of the gritty/protein powder I expected to taste.
I didn’t feel the bloat I sometimes get after having breakfast like this and didn’t need the post carb nap. I think my only complaint is that I didn’t try cooking it up as a waffle, but that’s gonna happen next time. Doesn’t this just make you want to try one of these?
